This a refreshing and low fat recipe of an arabian salad. Perfect for summer afternoons or to fancy your dinner with bit of creativity!!!!
Ingredients:
1/2 iceberg lettuce thinly chopped
3 diced tomatoes
1 onion chopped in very tiny pieces (big pieces will contribute to a stinky breath, so watch out!!)
4 table spoons of olive oil
Salt
Black Pepper
Fresch cut parsley
Approx. 15 Fresh mint leaves
1 lime
1 cup of wheat (not the cous cous type, but the Burghol)
How to do prepare:
Before anything, let the wheat soak in water while you chop the vegetables. The wheat should stay soaked for approximatelly 40 minutes to absorb the water. Remember that: the wheat should be the last thing to add to your dish.
Mix in a large bowl the chopped lettuce, the onions and the tomatoes. Cut the fresh mint in small pieces and add to the bowl. Add the parsley cut in small pieces too to it. Squeeze the lime in the bowl, and add the olive oil to it. Then depending on how salty you eat your food normally, put the salt and the pepper in the salad. Mix it all and try a little - just to make sure it doesnt need more of any ingredient.
Finally, drain the wheat and mix with the salad. Again, try. Like it?!
Great! Then its time to put it in a very fancy plate, add a little mint leaf on top to decorate it and impress everyone! ;)
